Spaghetti with Garlic/ Spaghetti Aglio e Olio/ 香蒜橄欖油意粉

This simple Spaghetti Aglio e Olio, a classic Italian pasta with garlic and olive oil, takes only 5 ingredients and less than 20 minutes to make!

Ingredients

Kosher Salt 食鹽
450g Spaghetti / 意大利麵
120g Extra Virgin Olive Oil / 特級初榨橄欖油
4 Medium Clove Garlic, thinly sliced/ 中型蒜頭, 切薄片
Grated Parmesan Cheese, for garnish/ 帕馬森芝士粉, 裝飾用

Instructions

  1. In a pot of salted boiling water, cook spaghetti until just shy of al dente (about 1 minute less than the package directs). Reserve pasta cooking water.

  2. Meanwhile, in a large skillet, combine 6 tablespoons of oil and garlic. Cook over medium heat until garlic is very lightly golden, about 5 minutes. (Adjust heat as necessary to keep it gently sizzling.)

  3. Transfer pasta to skillet along with 1/2 cup pasta water, increase heat to high and cook, stirring and tossing rapidly, until a creamy, emulsified sauce forms and coats the noodles. Remove from heat, add the remaining 2 tablespoons olive oil, and stir well to combine. Mix in parsley, if using, and serve right away.

  1. 按照意粉包裝說明的指示減少1分鐘烹煮意粉至彈牙口感並保留意粉水。
  2. 在易潔鑊上,落6湯匙的特級初榨橄欖油和蒜片,用中火煎至金黃色約5分鐘。
  3. 把煮好的意粉及1/2杯的意粉水放落易潔銩鑊上以大火拌勻至乳白色後,離火拌入2湯匙特級初榨橄欖油便可以上碟。可加入帕馬森芝士粉裝飾。
