Scallops, also known as St. James shells or sea scallops, are a prized shellfish with a very distinctive, sweetish flavor. This scallop is already without the shell and coral, for easier handling in cooking.

Chef's Advice

To best bring out the flavor of the scallops, it will be enough to season them with oil and sear them in a pan a few seconds on each side, until golden brown. But the most traditional recipes are scallops au gratin in the oven.
