Spicy Eggplant with Minced Pork is a well-known traditional Chinese dish, but in this recipe, we twisted it with some Italian ingredients.
SERVING 4 PREP TIME 15 MINS COOKING TIME 30 MINS
- Clean and slice eggplant into thin portions. Soak in mild salt water (enough to cover) for 15-20 minutes. Pat dry with paper towel and set aside.
- Heat pan and add 1 tbsp oil. Stir fry garlic with medium heat until fragmented then add minced pork and anchovies until cooked and add Nduja sauce.
- Add the chopped eggplants to the pan and mix well with high heat. Add some sugar and water to balance out the saltiness. Cover the pan with lid and let it simmer for around 5 mins with low heat.
- Garnish with parsley and enjoy!
